1- Sa siryal endosperm, ito ay ang almirol fraction ng mga molecule o residues na binubuo ng mga unit ng asukal, tuwid maikling chains (tingnan ang nonwaxy endosperm). 2- Ang mahalagang linear na bahagi ng almirol, isang polimer ng asukal (dextrose) na may hanggang sa 1,000 mga yunit ng asukal. Ito ay nagbibigay ng isang asul na kumplikado na may yodo at contributes nang direkta sa kanin tigas. Ito ay sinusukat colorimetrically sa pamamagitan ng kanyang asul na kumplikado na may yodo sa asetato buffer.
